Here is a recipe that friends and family have enjoyed on the regular at our house:
Chipotle Crema Sauce:
- 1 cup sour cream
- 2 tablespoons mayonnaise
- 2 chipotle peppers in adobo sauce (adjust according to your spice preference)
- 1 tablespoon adobo sauce (from the chipotle pepper can)
- 1 clove garlic, minced
- 2 tablespoons fresh lime juice
- Salt, to taste
1. In a blender or food processor, add the sour cream, mayonnaise, chipotle peppers, adobo sauce, minced garlic, and lime juice.
2. Blend the ingredients until smooth and well combined. You can adjust the consistency by adding more sour cream if it's too thick or more lime juice if it's too thick.
3. Taste the sauce and add salt as needed. Remember that the chipotle peppers and adobo sauce already contain salt, so start with a little and add more if necessary.
4. Transfer the chipotle crema sauce to a serving bowl. If desired, garnish with freshly chopped cilantro leaves.
5. Serve the chipotle crema sauce immediately or refrigerate it for later use. It will keep well in the refrigerator for up to 1 week.
Our House Chimichurri:
- 1 Fresno pepper, seeds removed and finely chopped
- 1 cup fresh cilantro leaves, chopped
- 1 cup fresh Italian parsley leaves, chopped
- 1 shallot, finely chopped
- 3 cloves garlic, minced
- 3 tablespoons red wine vinegar
- 1/2 cup extra-virgin olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
1. In a medium-sized bowl, combine the Fresno pepper, cilantro, Italian parsley, shallot, and minced garlic.
2. Add the red wine vinegar, extra-virgin olive oil, salt, and black pepper to the bowl.
3. Stir all the ingredients together until well combined. Make sure the herbs and aromatics are evenly distributed throughout the sauce.
4. Taste the chimichurri and adjust the seasoning if needed. You can add more salt, pepper, or red wine vinegar according to your preference.
5. Let the chimichurri sauce sit at room temperature for about 15 minutes to allow the flavors to meld together.
6. Once the chimichurri has rested, transfer it to a jar or container with a tight-fitting lid. Store in the refrigerator for at least 1 hour to allow the flavors to intensify. The chimichurri can be kept refrigerated for up to 1 week.
Let's Make Kabobs!
- 1 pound steak (such as sirloin or ribeye), cut into 1-inch cubes
- 1 red bell pepper, seeded and cut into chunks
- 1 yellow bell pepper, seeded and cut into chunks
- 1 yellow onion, cut into chunks
- Salt and black pepper, to taste
- Wooden or metal skewers
- Chipotle crema (recipe mentioned earlier)
- Chimichurri sauce (recipe mentioned earlier)
1. Preheat your grill to medium-high heat.
2. In a bowl, add the steak cubes and generously season them with salt and black pepper. Toss to coat the meat evenly.
3. Take the wooden skewers and soak them in water for about 15 minutes to prevent them from burning on the grill.
4. Thread the marinated steak cubes, alternating with chunks of red bell pepper, yellow bell pepper, and onion onto the skewers. Repeat until all the ingredients are used.
5. Place the assembled kabobs on the preheated grill and cook for about 8-10 minutes, turning occasionally, until the steak is cooked to your desired doneness and the vegetables are slightly charred.
6. While the kabobs are grilling, prepare a plate with a dollop of chipotle crema on each serving spot.
7. Once the kabobs are cooked, carefully remove them from the grill and place them on top of the chipotle crema on the serving plate.
8. Drizzle the cooked kabobs with chimichurri sauce, allowing the flavors to infuse into the meat and vegetables.
9. Serve the marinated steak kabobs immediately as a main course or with a side of rice or salad. Enjoy the smoky, spicy, and flavorful combination of the chipotle crema, grilled steak, and fresh chimichurri!
